Cooking with coffee and chicken

Coffee isn’t the first spice that comes to mind when thinking about new ways to serve chicken, but that’s what’s so great about it.

If those compliments you’re getting for your chicken dishes are starting to sound polite, but insincere, maybe it’s time to break some new ground.  This coffee flavoured chicken recipe is sure to put a sparkle in your guests’ eyes, so fire up your Lavazza espresso machine and get started.
 
Grilled Caramelised Coffee Chicken Breasts
 
Grilled indoors or out on the BBQ, this chicken and coffee dish also contains an ingredient not always found in the average kitchen – jalapeño jelly. You may need to look in the gourmet section of your supermarket or find it at a better deli. The jalapeño jelly adds just the right touch of spice to the dish. Together with the coffee, this is a delicious caramelised chicken dish for adults.
 
The recipe below is for 4 chicken breasts, so adjust the ingredients accordingly.
 
Start by making the brine:
 

  • ½ cup Lavazza espresso. A strong brew is best, so use an espresso coffee pod.
  • ¼ cup sea salt
  • 3 tbsp brown sugar
  • 2 tbsp Worcestershire sauce
  • ½ tsp black pepper
  • 1 tbsp mustard seeds (or substitute good quality Dijon mustard)
  • 3 cups water at room temperature

 
Stir these ingredients until the salt and sugar are thoroughly dissolved. Pour into a ziplock bag, add chicken and store in the fridge for at least an hour. For best results, make the brine early and store in the fridge for 2 to 3 hours.
 
After you’ve made the brine and are getting ready to cook, it’s time to make the sauce. These are the ingredients you will need:
 

  • 3 slices crisp bacon, diced
  • ½ minced onion
  • 1 cup coffee (again, use an espresso blend in your Lavazza espresso machine)
  • 1 cup beef stock
  • 1 tbsp lemon juice
  • 2 tsp cornstarch
  • ¼ cup jalapeño jelly
  • 1 tbsp brown sugar

 
After cooking the bacon, remove it from the pan and drain the oil. Then return the bacon to the pan and add the minced onion. Cook until the onion is soft and then add the coffee and beef stock. Simmer until the liquid is reduced to about 1 cup. While you’re waiting, mix the lemon juice and cornstarch together until well blended and then add the jalapeño jelly and brown sugar. Finally, mix all the sauce ingredients together and heat gently.
 
After removing the chicken from the bag, lightly rub both sides of each chicken breast with olive oil and salt and pepper to taste before grilling.  Grill for about 6 minutes each side and serve with the sauce on the side so your guests can add sauce to their taste. Be warned, though: after their first tentative taste, they will probably want to add more sauce.
